A kid-friendly, toothpick-free mini caprese skewer recipe that is quick, fresh, and perfect for lunchboxes. It combines creamy mozzarella, cherry tomatoes, and basil wrapped together for easy handling and a delicious bite.

Ingredients

  • Creamy fresh mozzarella balls (bocconcini or ciliegine size, about 1 inch diameter)
  • Cherry or grape tomatoes (ripe and firm)
  • Fresh basil leaves (small to medium-sized)
  • Balsamic glaze (for drizzling)
  • Extra virgin olive oil (optional, for a light drizzle)
  • Salt and freshly cracked black pepper (a pinch)

Instructions

  1. Rinse the cherry tomatoes and basil leaves gently under cold water. Pat dry with a paper towel to avoid excess moisture. Drain the mozzarella balls well to prevent sogginess.
  2. In a mixing bowl, combine the mozzarella balls and tomatoes. Drizzle lightly with extra virgin olive oil, sprinkle a pinch of salt and cracked black pepper, and toss gently to coat.
  3. Lay out a basil leaf flat on your workspace. Place one mozzarella ball and one cherry tomato side by side on the basil. Fold the basil leaf over the two ingredients, gently pressing so they stick together without tearing the leaf. Repeat until all ingredients are used.
  4. Arrange the mini caprese “skewers” in your lunchbox or container. Optionally, nestle each wrapped skewer in a silicone cupcake liner or on a parchment square to keep them from rolling around.
  5. Drizzle balsamic glaze over the skewers just before serving or pack it in a small separate container to drizzle at lunchtime.

Notes

Use firm, fresh mozzarella to avoid sogginess. Pat dry all ingredients well. Wrap basil leaves gently to avoid tearing. Add balsamic glaze just before serving to keep basil fresh. Keep skewers cool with an ice pack in lunchboxes.
