  • 6 cups Rice Krispies cereal
  • 10 oz (about 40 large) marshmallows, regular or mini
  • 3 tablespoons unsalted butter, cut into small pieces
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract (optional)
  • 1/2 cup candy eyeballs
  • 1/4 cup white chocolate chips or candy melts
  • 1 tablespoon coconut oil or vegetable shortening
  • Green or purple food coloring (optional)

Instructions

  1. Line a 9×13-inch baking pan with parchment paper, leaving overhang on two sides. Lightly grease the parchment with butter or cooking spray.
  2. In a large pot over medium-low heat, melt 3 tablespoons of butter. Add 10 oz marshmallows and 1/4 teaspoon salt. Stir constantly until completely melted and smooth, about 5 minutes. Remove from heat immediately.
  3. If using, stir in 1 teaspoon vanilla extract. Add 6 cups Rice Krispies cereal and fold gently until all cereal is coated. Work quickly.
  4. Transfer the mixture to the prepared pan. Using greased wax paper or a spatula, press evenly into the pan without pressing too hard. Let cool for 10 minutes.
  5. In a small microwave-safe bowl, combine 1/4 cup white chocolate chips and 1 tablespoon coconut oil. Microwave in 20-second intervals, stirring between, until melted and smooth (about 60 seconds total).
  6. Using a toothpick or small spoon, dab a tiny amount of melted white chocolate onto the back of each candy eyeball. Press gently onto the surface of the still-warm treats in a random pattern. Work quickly.
  7. Let the treats cool completely at room temperature, about 30 minutes, until the white chocolate hardens.
  8. Use the parchment overhang to lift the block out of the pan. Cut into 2-inch squares (about 24 treats) using a sharp knife, wiping the blade clean between cuts. Serve immediately or store.

Notes

Don’t overcook the marshmallows or the treats will become hard. Use room temperature butter and marshmallows for even melting. Grease your hands with butter or cooking spray if pressing the mixture by hand. The treats taste even better the next day. Store in an airtight container at room temperature for up to 3 days; do not refrigerate. Freeze for up to 2 months.
