Instructions

  1. In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Stir until evenly coated and mixture holds together when pressed, about 5 minutes. Add more butter if too dry.
  2. Press the crumb mixture firmly and evenly into the bottom and slightly up the sides (about ½ inch) of a 9-inch springform or pizza pan. Refrigerate for at least 15 minutes to set.
  3. In a large bowl, beat softened cream cheese until smooth. Gradually add powdered sugar and vanilla extract, mixing well after each addition.
  4. In a separate bowl, whip heavy cream to soft peaks. Gently fold whipped cream into cream cheese mixture until fluffy.
  5. Spread the cream cheese frosting evenly over the chilled crust, smoothing with a spatula.
  6. Arrange sliced strawberries, blueberries, kiwi, banana, and mandarin segments in a colorful pattern on top of the frosting.
  7. Refrigerate the assembled fruit pizza for at least 30 minutes to let frosting firm and flavors meld. If in a rush, 15 minutes will suffice.
  8. Slice with a sharp knife warmed under hot water and wiped dry for clean cuts. Serve chilled.
