Easy No-Bake S’mores Icebox Cake: Kid-Approved Dessert

A no-bake icebox cake made with layers of graham crackers, chocolate pudding, and marshmallow fluff, topped with mini marshmallows and chocolate. Perfect for hot days when you don’t want to turn on the oven.

  • 1 (3.9 oz) box instant chocolate pudding mix
  • 2 cups cold whole milk
  • 1 (14.4 oz) box graham crackers (about 16 full sheets)
  • 1 (7 oz) jar marshmallow fluff
  • 1 ½ cups mini marshmallows
  • 1 (1.55 oz) Hershey’s milk chocolate bar, roughly chopped (or ½ cup chocolate chips)
  • Optional: 2 tablespoons graham cracker crumbs for garnish

Instructions

  1. Make the pudding: In a large mixing bowl, whisk together the instant chocolate pudding mix and 2 cups of cold milk. Whisk for about 2 minutes until it starts to thicken. Let it sit for 5 minutes to set up completely.
  2. Prepare your pan: Lightly spray a 9×13 baking dish with non-stick cooking spray, or wipe it with a tiny bit of butter.
  3. Create the first layer: Arrange a single layer of graham crackers on the bottom of the dish, breaking some to fit gaps.
  4. Spread the pudding: Spoon half of the prepared chocolate pudding over the graham crackers and spread evenly with a spatula.
  5. Add the marshmallow fluff: Dollop half of the marshmallow fluff over the pudding layer. Microwave the fluff for 10-15 seconds to soften if needed, then spread gently.
  6. Repeat the layers: Add another layer of graham crackers, then the remaining chocolate pudding, then the remaining marshmallow fluff. Finish with a final layer of graham crackers on top.
  7. Top it off: Sprinkle the mini marshmallows evenly over the top layer, then scatter the chopped chocolate bar over the marshmallows.
  8. Chill and set: Cover the dish tightly with plastic wrap or aluminum foil. Refrigerate for at least 6 hours, but overnight is best.
  9. Serve: Cut into squares. Garnish with graham cracker crumbs if desired. Serve cold straight from the fridge.

Notes

For best results, chill overnight. The graham crackers need time to soften. If you want a toasted marshmallow look, broil the top for 1-2 minutes before serving, but watch closely to avoid burning. Use cold milk for the pudding to ensure it sets properly.
