Easy One-Pan Lemon Herb Salmon Recipe with Asparagus and Tomatoes

A quick and easy one-pan salmon recipe featuring lemon, fresh herbs, asparagus, and cherry tomatoes. Perfectly roasted to keep the salmon moist and flaky with vibrant, flavorful vegetables.

  • 4 skin-on salmon fillets (about 6 ounces or 170 grams each)
  • 1 bunch asparagus, trimmed (about 1 pound or 450 grams)
  • 1 pint cherry tomatoes (about 10 ounces or 280 grams)
  • 1 large lemon, zested and sliced
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh dill
  • 3 cloves garlic, minced
  • 3 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste
  • Optional: red pepper flakes or a splash of white wine

Instructions

  1. Preheat your oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper or aluminum foil.
  2. Trim the woody ends off the asparagus and halve the cherry tomatoes if preferred. In a mixing bowl, toss the asparagus and tomatoes with 2 tablespoons olive oil, minced garlic, salt, and pepper.
  3. Spread the vegetables evenly on the prepared baking sheet.
  4. Pat the salmon fillets dry with paper towels. Rub each fillet with the remaining 1 tablespoon olive oil, lemon zest, salt, and pepper.
  5. Place the salmon fillets skin-side down on the baking sheet nestled among the vegetables.
  6. Lay thin slices of lemon over the salmon and scatter chopped parsley and dill across the entire pan.
  7. Roast in the oven for 12 to 15 minutes, until salmon flakes easily with a fork and reaches an internal temperature of 125°F (52°C). The asparagus should be tender but still crisp, and the tomatoes blistered and juicy.
  8. At around 7 minutes, gently stir the vegetables for even roasting, being careful not to disturb the salmon.
  9. Remove from oven and let the salmon rest for a few minutes. Squeeze additional fresh lemon juice over everything before serving.

Notes

Let salmon rest at room temperature for 15 minutes before cooking for even doneness. Pat salmon dry to help skin crisp. Avoid overcrowding the pan to prevent soggy vegetables. Adjust roasting time if asparagus stalks are thinner than 1/2 inch by reducing 2 minutes. Use fresh herbs for best flavor; if using dried, use one-third the amount and add earlier in cooking.
