A quick and easy summer dessert featuring juicy peaches topped with a buttery, cinnamon-kissed crumb topping made with brown butter for a rich, nutty flavor.

Ingredients

Scale
  • 56 medium fresh peaches, peeled and sliced (or 4 cups frozen sliced peaches, thawed)
  • 3/4 cup granulated sugar (for peaches)
  • 1 teaspoon ground cinnamon
  • 1 cup all-purpose flour
  • 1 cup granulated sugar (for cake topping)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 10 tablespoons (1 1/4 sticks) unsalted butter, browned and slightly cooled
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish lightly with butter or non-stick spray.
  2. Peel and slice the peaches if using fresh. Toss them in a mixing bowl with 3/4 cup granulated sugar and 1 teaspoon cinnamon. Set aside.
  3. Place unsalted butter in a medium saucepan over medium heat. Stir constantly as it melts, then watch for it to foam and turn a light golden brown with a nutty aroma (about 5-7 minutes). Remove from heat and let cool slightly.
  4. In a separate bowl, combine 1 cup flour, 1 cup granulated sugar, 1 teaspoon baking powder, and 1/4 teaspoon salt. Whisk together to blend evenly.
  5. Pour the browned butter and 1 teaspoon vanilla extract into the dry mix. Stir gently until just combined; the batter will be thick and crumbly.
  6. Pour the peach mixture into the prepared baking dish, spreading evenly. Dollop the batter over the peaches in spoonfuls; the batter will spread as it bakes.
  7. Bake for 40-45 minutes until the top is golden brown and bubbling around the edges. Tent loosely with foil if the top browns too quickly.
  8. Let the cake rest for 10-15 minutes before serving to let the juices thicken. Serve warm, ideally with vanilla ice cream or whipped cream.

Notes

Use Kerrygold butter for richer flavor. For gluten-free, substitute flour with a 1:1 gluten-free baking blend. For dairy-free, use vegan butter or coconut oil browned gently. Do not overmix batter; dollop batter on peaches instead of spreading. If peaches are very juicy, expect some liquid pooling around edges. Let cake rest before serving for best texture.
