An easy, hands-off pumpkin cinnamon roll casserole with a creamy cream cheese drizzle, perfect for cozy fall mornings and effortless brunches.

Ingredients

Scale
  • 1 (10-count) can refrigerated cinnamon rolls with icing (e.g., Pillsbury classic cinnamon rolls)
  • 1 cup canned pumpkin puree (not pumpkin pie filling)
  • 2 large eggs, room temperature
  • 1 cup whole milk or any milk of choice (almond milk works well for dairy-free)
  • ½ cup granulated sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt
  • 4 ounces cream cheese, softened
  • ¼ cup powdered sugar
  • 23 tablespoons milk (for cream cheese drizzle)
  • ½ teaspoon vanilla extract (for cream cheese drizzle)

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch casserole dish with butter or non-stick spray.
  2. Open the can of cinnamon rolls and cut each roll into quarters.
  3. Arrange the cinnamon roll pieces evenly in the casserole dish.
  4. In a large bowl, whisk together pumpkin puree, eggs, milk, sugar, cinnamon, nutmeg, ginger, vanilla extract, and salt until smooth.
  5. Pour the pumpkin custard evenly over the cinnamon roll pieces and let sit for 5 minutes to absorb.
  6. Bake uncovered for 35-40 minutes until custard is set and top is golden brown. A toothpick inserted should come out mostly clean with a few moist crumbs.
  7. While baking, beat softened cream cheese, powdered sugar, milk, and vanilla extract in a small bowl until smooth and drizzle-able. Adjust milk for desired consistency.
  8. Let casserole cool for about 10 minutes after baking, then drizzle cream cheese glaze over the top.
  9. Serve warm. Reheat leftovers gently in microwave or oven.

Notes

Let the custard sit on the cinnamon rolls for about 5 minutes before baking to avoid sogginess. Use room temperature eggs and milk for smooth custard. Soften cream cheese before making the drizzle to prevent lumps. If casserole browns too fast but isn’t set, tent with foil to finish baking. Variations include gluten-free, vegan, adding nuts or fruit, or alternative toppings like maple syrup.
