  • 1/2 cup packed brown sugar (100g), preferably dark brown sugar
  • 1/3 cup all-purpose flour (40g)
  • 6 tablespoons unsalted butter (85g), cold and cut into small pieces
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel and slice 4-5 medium peaches to yield about 4 cups. Toss the peach slices with 1/4 cup granulated sugar, 1 tablespoon fresh lemon juice, and 1 teaspoon ground cinnamon in a mixing bowl. Let sit for 10 minutes to macerate.
  3. In a separate bowl, combine 1 cup rolled oats, 1/2 cup packed brown sugar, 1/3 cup all-purpose flour, and a pinch of salt. Add 6 tablespoons cold, cubed unsalted butter and 1 teaspoon vanilla extract. Use a pastry cutter or fingers to work the butter into the oat mixture until crumbly with pea-sized bits.
  4. Pour the peach mixture into an 8- or 10-inch ovenproof skillet, spreading evenly. Sprinkle the oat topping evenly over the peaches without pressing down.
  5. Bake in the preheated oven for 25-30 minutes until the topping is golden brown and peach juices are bubbling around the edges.
  6. Let the crisp cool slightly for about 10 minutes before serving to thicken and settle the topping.

Notes

Use ripe but firm peaches for best texture. If peaches are underripe, add a tablespoon of honey or maple syrup to the filling. Use cold butter for a crumbly topping and avoid overmixing. Tent with foil if topping browns too fast. Frozen peaches can be used if thawed and drained. For gluten-free, substitute flour with almond or oat flour.
