  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can corn, drained (or 1.5 cups frozen corn)
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 (4-ounce) can diced green chiles
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 2 cups low-sodium chicken broth
  • Salt and black pepper, to taste
  • 4 ounces cream cheese, softened and cut into cubes
  • Shredded Mexican blend cheese, for topping
  • Fresh cilantro, chopped, for topping
  • Tortilla chips, for serving
  • Sour cream or Greek yogurt, for topping
  • Diced avocado, for topping

Instructions

  1. Place the chicken breasts in the bottom of your slow cooker. Top with the diced onion, minced garlic, drained black beans, drained corn, and diced green chiles. Do not stir yet.
  2. Pour the entire can of enchilada sauce and the can of diced tomatoes with green chiles over the top. Add the chicken broth, cumin, chili powder, smoked paprika, and a pinch of salt and pepper. Give everything a gentle stir, making sure the spices are distributed and the chicken is mostly submerged.
  3. Put the lid on your slow cooker. Cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until the chicken is fork-tender and shreds easily.
  4. Once the chicken is cooked, carefully remove it from the slow cooker using tongs and place it on a cutting board. Let it rest for a minute or two. Use two forks to shred the chicken into bite-sized pieces.
  5. Return the shredded chicken to the slow cooker. Cut the softened cream cheese into small cubes and add them to the pot. Stir gently until the cream cheese is completely melted and the soup becomes creamy and smooth, about 5 minutes.
  6. Taste the soup and adjust the salt, pepper, or spices to your liking. If the soup is too thick, stir in a little extra chicken broth. If it’s too thin, let it cook on LOW with the lid off for another 15-20 minutes to reduce.

To make it spicier, use hot enchilada sauce and add a diced jalapeño. For a vegetarian version, omit chicken and use vegetable broth, adding extra beans.
