  • 1 pound (about 450g) smoked sausage, cut into 1-inch rounds
  • 2 medium bell peppers (any color), cut into 1-inch squares
  • 1 large red onion, cut into 1-inch chunks
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper, freshly ground
  • 810 wooden skewers, soaked in water for 20 minutes

Instructions

  1. Soak the wooden skewers in water for 15-20 minutes to prevent burning.
  2. Preheat your grill to medium-high heat (about 400°F/200°C). If using a grill pan, heat over medium-high for 5 minutes.
  3. Cut the smoked sausage into 1-inch rounds (about 16-20 pieces). Slice bell peppers into 1-inch squares and cut red onion into 1-inch chunks, separating layers slightly.
  4. In a large mixing bowl, combine sausage, peppers, and onion. Add olive oil, minced garlic, oregano, smoked paprika, salt, and black pepper. Toss until evenly coated.
  5. Thread ingredients onto skewers, alternating between sausage, pepper, and onion. Leave a little space between pieces. Aim for 4-5 pieces per skewer, making 8-10 skewers total.
  6. Place skewers on the grill. Cook for 4-5 minutes on the first side without moving. Flip and cook for another 4-5 minutes until sausage is heated through with crispy edges and peppers are tender with char marks.
  7. Remove skewers from grill and let rest for 2 minutes. Serve hot.

Notes

Soak wooden skewers for at least 20 minutes to prevent burning. For best results, don’t overload skewers and let them sit undisturbed for 4-5 minutes to develop grill marks. Fresh garlic is recommended over jarred. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat on a grill or in the oven; avoid the microwave.
