Easy Smoky Bacon-Wrapped Jalapeno Poppers

These smoky bacon-wrapped jalapeno poppers are the perfect game day or party appetizer. With a creamy, tangy cheese filling and crispy bacon, they’re easy to make and always a crowd-pleaser.

  • 12–15 fresh jalapeno peppers, medium
  • 8 ounces cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • 1 pound thin-cut bacon
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Place a wire rack inside a baking sheet lined with foil or parchment.
  2. Slice each jalapeno in half lengthwise. Use a small spoon to scoop out the seeds and white membranes.
  3. In a small mixing bowl, combine the softened cream cheese, shredded cheddar, smoked paprika, garlic powder, and a tiny pinch of salt and pepper. Mix until well combined.
  4. Fill each jalapeno half with the cheese mixture using a small spoon or piping bag.
  5. Cut each bacon slice in half crosswise. Wrap one half-slice around each filled jalapeno, overlapping the ends slightly on the bottom. Place seam-side down on the wire rack.
  6. Bake for 20-25 minutes, until the bacon is crispy and browned and the filling is hot and bubbly.
  7. Let the poppers rest on the rack for about 5 minutes before serving. Serve warm.

Notes

For less heat, remove all seeds and membranes. For extra crispiness, use a wire rack. Double the batch for parties. Wear gloves when handling jalapenos to avoid skin irritation.
