  • 8 ounces (226 grams) cream cheese, softened
  • 1/2 cup (113 grams) unsalted butter, softened
  • 3 cups (360 grams) powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch sheet pan with butter or non-stick spray and dust with flour.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat the softened butter and granulated sugar on medium speed until pale and fluffy, about 3-4 minutes.
  4. Add eggs one at a time, beating well after each addition.
  5. Stir in fresh lemon juice, lemon zest, and vanilla extract.
  6. With mixer on low, alternately add the dry ingredients and milk in three additions, beginning and ending with the dry ingredients. Mix until just combined.
  7. Pour the batter evenly into the prepared pan and smooth the top.
  8. Bake for 35-40 minutes, checking at 33 minutes with a toothpick; it should come out clean or with a few moist crumbs.
  9. Cool the cake completely in the pan on a wire rack for at least 30 minutes.
  10. While the cake cools, beat together cream cheese and softened butter until smooth and fluffy, about 2-3 minutes.
  11. Gradually add powdered sugar on low speed, then mix in vanilla extract.
  12. Gently fold in the finely chopped strawberries.
  13. Spread the frosting evenly over the cooled cake.
  14. Serve immediately or chill for an hour to let the frosting set.

Use room temperature ingredients for smooth batter and frosting. Do not overmix the batter to avoid a dense cake. Fold strawberries gently into frosting to prevent runniness.
