  • 2 large garlic cloves, smashed
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon black peppercorns
  • Optional: pinch of crushed red pepper flakes for extra heat

Instructions

  1. Rinse 1 pound (450 grams) of banana peppers thoroughly under cold water. Slice them into thin rings about 1/4 inch (6 mm) thick. Remove seeds for milder pickles or leave some seeds for heat. Set aside.
  2. In a small saucepan, combine 1 cup (240 ml) white vinegar, 1 cup (240 ml) water, 3/4 cup (150 grams) granulated sugar, and 1 tablespoon (15 grams) salt. Add 2 smashed garlic cloves, 1 teaspoon mustard seeds, and 1/2 teaspoon black peppercorns. Bring to a boil over medium heat, stirring occasionally, until sugar and salt dissolve, about 5 minutes.
  3. Using a fork or tongs, pack the sliced banana peppers tightly into a clean 1-quart (1-liter) glass jar without crushing them.
  4. Pour the hot brine over the peppers, leaving about 1/2 inch (1.3 cm) headspace. Ensure peppers are fully submerged; press down gently if needed.
  5. Screw the lid on tightly and let the jar cool to room temperature, about 30-45 minutes. Then place the jar in the refrigerator.
  6. Let the peppers pickle for at least 24 hours before tasting to allow flavors to develop and peppers to stay crisp.
