  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper

  • 4 large flour tortillas (10-inch size)
  • 8 ounces sliced deli turkey (oven-roasted or smoked)
  • 1 cup shredded cheddar cheese (sharp recommended)
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup finely chopped green onions (optional)
  • 1/4 cup finely chopped bell pepper (optional)
  • 2 tablespoons fresh parsley or chives, chopped (optional)

Instructions

  1. Soften the cream cheese: Remove from fridge at least 30 minutes before starting, or microwave in 10-second bursts until just softened.
  2. Make the cream cheese spread: In a medium bowl, combine softened cream cheese, mayonnaise, garlic powder, onion powder, black pepper, and salt. Beat with a hand mixer on medium speed for about 2 minutes until smooth and fluffy. Adjust seasoning to taste.
  3. Prep the tortillas: Lay tortillas flat on a cutting board. If stiff, microwave for 15 seconds wrapped in a damp paper towel to make pliable.
  4. Spread the cream cheese mixture: Using a rubber spatula, spread an even layer (about 1/4 inch thick) over each tortilla, going all the way to the edges.
  5. Layer the turkey: Place turkey slices evenly over the cream cheese layer, overlapping slightly. Press down gently to adhere.
  6. Add the cheese: Sprinkle shredded cheddar and mozzarella evenly over the turkey. If using optional add-ins, sprinkle them over the cheese now.
  7. Roll it up tight: Starting at one end, roll the tortilla tightly without tearing, keeping filling tucked in. Place seam side down.
  8. Wrap and chill: Wrap each rolled tortilla tightly in plastic wrap, twisting the ends to seal. Place on a baking sheet or plate and refrigerate for at least 30 minutes (2 hours or overnight for best results).
  9. Slice and serve: Unwrap chilled rolls and place on a cutting board. Using a sharp chef’s knife or serrated knife, slice into 1-inch thick pinwheels using a gentle sawing motion. Arrange on a platter with spiral facing up.

Notes

For best results, chill the rolls for at least 2 hours or overnight. Let pinwheels sit at room temperature for 10 minutes before serving to soften the cream cheese slightly. Trim the ends of each roll before slicing for prettier pinwheels. Use a serrated knife for cleaner cuts. The cream cheese must be truly soft for easy spreading.
