Easy Watermelon Feta Mint Salad with Balsamic Glaze

A refreshing summer salad combining juicy watermelon, salty feta, fresh mint, and tangy balsamic glaze. Ready in 10 minutes, it’s the perfect no-cook dish for hot weather.

  • 1 small seedless watermelon (about 4–5 pounds), cut into 1-inch cubes (about 6–7 cups)
  • 8 ounces block feta cheese, cut into 1/2-inch cubes
  • 1/2 cup fresh mint leaves, thinly sliced (chiffonade)
  • 1/4 cup fresh lime juice (from about 2–3 limes)
  • 1/4 cup high-quality balsamic glaze
  • 1/2 cup thinly sliced red onion (optional)
  • 1/4 cup toasted pine nuts (optional)
  • Flaky sea salt (optional)

Instructions

  1. Prep the watermelon: Cut watermelon in half crosswise, then into 1-inch thick slices. Lay each slice flat and cut off the rind. Cut flesh into 1-inch cubes (about 6-7 cups).
  2. Chill the watermelon: Spread cubed watermelon on a baking sheet lined with paper towels and refrigerate for about 15 minutes to remove excess moisture.
  3. Prepare the feta: Pat block feta dry with a paper towel. Cut into 1/2-inch cubes or crumble with fingers. Set aside in the fridge.
  4. Make the dressing: In a small bowl, whisk together fresh lime juice, a pinch of salt, and a tiny pinch of black pepper.
  5. Prepare the mint: Stack mint leaves, roll them up, and slice into thin ribbons (chiffonade).
  6. Assemble the salad: In a large bowl, gently combine chilled watermelon cubes, feta cubes, and most of the mint ribbons. Drizzle lime dressing over the top and toss gently with your hands.
  7. Add finishing touches: Transfer to a serving platter. Drizzle balsamic glaze in a zigzag pattern over the top. Sprinkle remaining mint ribbons. Add optional red onion or pine nuts if using.
  8. Serve immediately within 15 minutes of assembling.

Notes

For best results, use block feta instead of pre-crumbled. Chill watermelon cubes on paper towels to prevent sogginess. Assemble just before serving. If making ahead, store components separately. For homemade balsamic glaze, simmer 1 cup balsamic vinegar until reduced by half (15-20 minutes) and cool completely.
