  • 1/4 cup pure pumpkin puree (not pumpkin pie filling)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg

  • 1/8 teaspoon ground cloves
  • 1 teaspoon vanilla extract
  • Pinch of salt (optional)

Instructions

  1. Combine 1 cup brown sugar and 1 cup water in a small saucepan over medium heat. Stir occasionally until the sugar completely dissolves, about 3-5 minutes.
  2. Lower heat to medium-low and whisk in 1/4 cup pumpkin puree, 1 teaspoon cinnamon, 1/2 teaspoon nutmeg, 1/4 teaspoon ginger, and 1/8 teaspoon cloves. Stir gently to blend.
  3. Simmer gently for 10 minutes, stirring occasionally to prevent boiling over or sticking. Add a splash of water if syrup becomes too thick.
  4. Remove from heat and stir in 1 teaspoon vanilla extract and a pinch of salt if using.
  5. Pour syrup through a fine mesh strainer into a heat-safe container to remove pumpkin solids, pressing gently to extract syrup.
  6. Let syrup cool to room temperature, then seal and store in the refrigerator for up to 2 weeks. Shake gently before use.
  7. To make a latte, add 2-3 tablespoons of syrup to brewed coffee or espresso, top with steamed milk, and garnish with cinnamon if desired.

Notes

Strain the syrup to remove pumpkin solids for a smooth texture. Simmer gently to avoid burning sugar. Adjust sweetness by reducing brown sugar or adding more water. Syrup thickens when cold; shake or warm slightly before use. Flavors deepen after a day or two in the fridge.
