A quick and easy summer salad featuring smoky grilled peaches, creamy burrata cheese, and a sweet-tangy honey balsamic glaze. Perfect for last-minute entertaining or casual gatherings.

  • 3 medium fresh peaches, halved and pitted
  • 1 ball burrata cheese (about 8 ounces / 225 grams), at room temperature
  • 4 cups mixed salad greens (arugula, baby spinach, or spring mix)
  • 2 tablespoons extra-virgin olive oil
  • 3 tablespoons honey
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon fresh lemon juice
  • Salt to taste (sea salt or kosher salt preferred)
  • Freshly ground black pepper to taste
  • Optional toppings: toasted pine nuts, fresh basil leaves, flaky sea salt

Instructions

  1. Preheat your grill or grill pan to medium-high heat (about 5-7 minutes).
  2. Rinse and halve the peaches, removing the pits. Lightly brush the cut sides with olive oil.
  3. Place peaches cut side down on the grill. Grill for 3-4 minutes until char marks appear and peaches start to soften.
  4. Flip peaches and grill for another 2 minutes on the skin side. Peaches should be tender but hold their shape.
  5. In a small saucepan, combine honey, balsamic vinegar, and fresh lemon juice. Warm over low heat, stirring occasionally for 3-4 minutes until slightly thickened but still pourable. Remove from heat.
  6. On a large platter or bowl, arrange the mixed greens. Tear burrata into large chunks and scatter over the greens.
  7. Place the grilled peaches on top of the salad while still warm.
  8. Drizzle the honey balsamic glaze generously over the salad. Season with sea salt and freshly ground black pepper to taste.
  9. Add optional toppings like toasted pine nuts or fresh basil leaves if desired.
  10. Serve immediately while peaches are warm and burrata is creamy.

Choose firm but ripe peaches for best grilling results. Oil the grill or peaches to prevent sticking. Handle burrata gently by tearing with hands. Prepare glaze ahead and warm before serving if desired. Serve salad immediately to keep greens fresh and burrata creamy. For dairy-free option, substitute burrata with avocado or vegan cheese and honey with maple syrup.
