A tangy and bright zucchini relish with turmeric and celery seed that adds a warm, subtle earthiness and crunchy bite, perfect for burgers and more.

  • 4 medium zucchinis, finely chopped
  • 1 small yellow onion, finely diced
  • 1 small green bell pepper, finely chopped
  • 1 cup white vinegar
  • 3/4 cup granulated sugar
  • 1 teaspoon salt
  • 1 teaspoon celery seed
  • 1 teaspoon ground turmeric
  • 1 tablespoon mustard seed (optional)
  • 1/2 teaspoon ground black pepper
  • 1 cup water

Instructions

  1. Rinse and finely chop zucchinis, onion, and green bell pepper into about 1/4 inch pieces. Set aside.
  2. In a large saucepan, combine white vinegar, granulated sugar, and water. Bring to a gentle boil over medium heat, stirring occasionally until sugar dissolves.
  3. Stir in salt, celery seed, ground turmeric, mustard seed (if using), and ground black pepper.
  4. Add chopped vegetables to the simmering liquid and stir well to coat evenly. Be cautious as the mixture will bubble vigorously.
  5. Reduce heat to low and simmer uncovered for 15-20 minutes, stirring every few minutes, until vegetables are tender but still slightly crunchy and liquid thickens slightly.
  6. Remove from heat and let the relish cool to room temperature.
  7. Transfer to clean mason jars or airtight containers and refrigerate for at least 4 hours before serving, preferably overnight.

Notes

Do not over-chop vegetables to avoid a paste-like texture. Simmer gently and stir frequently to prevent burning. Use fresh celery seed and turmeric for best flavor. Let relish rest overnight for optimal flavor. If too watery after cooling, drain excess liquid before serving. Turmeric may stain utensils and surfaces.
