Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, granulated sugar, brown sugar, pumpkin pie spice, baking powder, baking soda, and salt until evenly distributed.
  3. In a separate medium bowl, whisk together the pumpkin puree, eggs, vegetable oil, milk, and vanilla extract until smooth and fully combined.
  4. Pour the wet ingredients into the dry ingredients. Use a rubber spatula to fold gently until just combined—no streaks of flour remain. A few small lumps are okay; do not overmix.
  5. In a small bowl, beat the softened cream cheese with an electric hand mixer until smooth. Add the sugar, flour, vanilla, and milk. Beat again until completely smooth and creamy (thick but spreadable).
