A quick and easy overnight oats recipe featuring fresh blueberries, lemon zest and juice, chia seeds, and honey for a refreshing and nutritious breakfast.

  • 1/2 cup (45g) old-fashioned rolled oats
  • 1 tablespoon (15g) chia seeds
  • 1/2 cup (75g) fresh blueberries (or thawed frozen blueberries)
  • Zest from 1 small lemon
  • 1 tablespoon (15ml) fresh lemon juice
  • 1 to 2 tablespoons (20-40ml) honey (or maple syrup/agave nectar for vegan option)
  • 1 cup (240ml) milk of choice (dairy, almond, oat, or coconut milk)
  • 1/2 teaspoon (2.5ml) vanilla extract (optional)
  • Pinch of salt

Instructions

  1. Combine 1/2 cup rolled oats and 1 tablespoon chia seeds in a jar or mixing bowl.
  2. Pour in 1 cup of your milk of choice.
  3. Stir in lemon zest, 1 tablespoon fresh lemon juice, 1 to 2 tablespoons honey, vanilla extract if using, and a pinch of salt.
  4. Mix thoroughly to avoid chia seed clumps.
  5. Fold in half of the blueberries (about 1/4 cup).
  6. Seal the jar or container and refrigerate overnight or for at least 6 hours.
  7. In the morning, stir the oats, top with remaining blueberries, and drizzle extra honey if desired. Serve chilled.

Notes

Use rolled oats for best texture; avoid instant oats. Stir just enough to prevent chia clumps but not too much to make mixture gluey. For creamier oats, add a spoonful of yogurt before refrigerating. Store in sealed container to avoid fridge odors. Add blueberries just before serving to keep them fresh.
