A quick and easy fresh dip combining black beans, zesty corn salsa, and fresh veggies for a vibrant, crowd-pleasing snack perfect for any occasion.

  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 cup fresh corn kernels (or thawed frozen corn)
  • 1 cup cherry tomatoes, halved or quartered
  • 1/2 cup red bell pepper, finely diced
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons pickled jalapeños, chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons fresh lime juice
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon honey or agave syrup
  • 1/2 teaspoon ground cumin
  • Salt and black pepper to taste

Instructions

  1. Rinse and drain the black beans thoroughly. If using fresh corn, cut kernels off about 2 ears of corn (approximately 1 cup). Halve or quarter the cherry tomatoes, finely dice the red bell pepper, finely chop the red onion, chop the pickled jalapeños, and roughly chop the fresh cilantro.
  2. In a large mixing bowl, combine the black beans, corn, tomatoes, bell pepper, onion, jalapeños, and cilantro. Toss gently to mix without bruising the beans or tomatoes.
  3. In a small bowl, whisk together the extra virgin olive oil, freshly squeezed lime juice, honey or agave syrup, ground cumin, and a pinch of salt and black pepper. Taste and adjust seasoning if needed.
  4. Pour the dressing over the salsa mixture and gently fold everything together until evenly coated. Cover and refrigerate for at least 30 minutes to let flavors marry, or serve immediately if needed.
  5. Before serving, give the dip a quick stir and adjust salt, pepper, or lime juice if desired. Serve chilled or at room temperature with sturdy tortilla chips or fresh veggie sticks.

Notes

Rinse and drain beans well to avoid excess liquid. Chill for at least 30 minutes for best flavor. Adjust heat by varying pickled jalapeños or adding fresh jalapeño or cayenne pepper. For creamier texture, add diced avocado before serving. Can be made ahead and stored in the fridge up to 3 days.
