  • 4 cups watermelon, cut into 1-inch cubes
  • 1 cup feta cheese, cubed or crumbled
  • 1/4 cup fresh mint leaves, whole
  • 2 tablespoons honey
  • Juice of 1 lime (about 2 tablespoons)
  • Pinch of sea salt (optional)

Instructions

  1. Cut about 4 cups (about 600g) of seedless watermelon into 1-inch cubes and pat dry with a paper towel to remove excess moisture.
  2. Cut 1 cup (about 150g) of firm feta cheese into cubes or crumble it if preferred.
  3. Wash and dry fresh mint leaves (about 1/4 cup), picking whole leaves.
  4. In a small bowl, whisk together 2 tablespoons honey and juice of 1 lime (about 2 tablespoons). Adjust sweetness or tartness to taste.
  5. Thread watermelon cube, a mint leaf, and a feta cube onto each skewer, repeating until all ingredients are used (aim for 2-3 bites per skewer).
  6. Arrange skewers on a serving platter and drizzle the honey lime mixture over them. Sprinkle a tiny pinch of sea salt on top if desired.
  7. Optional: Chill the skewers in the fridge for 10-15 minutes before serving for extra refreshment.

Notes

Use firm, ripe watermelon to avoid soggy skewers. Chill feta if soft to make skewering easier. Drizzle honey lime dressing slowly to avoid overpowering flavors. Assemble skewers just before serving to keep mint fresh and crisp. For vegan version, substitute feta with plant-based cheese and honey with agave syrup.
