  • 2 large eggs, room temperature
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon pure vanilla extract
  • 1 cup whole wheat flour
  • 1/2 cup vanilla or unflavored whey protein powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt
  • Optional: 1/4 cup chopped walnuts or pecans
  • Optional: 1/4 cup dark chocolate chips or cacao nibs
  • Optional: 1-2 tablespoons honey or maple syrup

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your mini muffin tin by spraying with non-stick cooking spray or lining with silicone liners.
  3. Mash the bananas in a medium mixing bowl until mostly smooth with a few small chunks remain (about 1 cup mashed).
  4. Add the eggs, unsweetened applesauce, and vanilla extract to the mashed bananas. Whisk until combined and slightly frothy.
  5. In a separate bowl, combine whole wheat flour, protein powder, baking powder, baking soda, cinnamon, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, stirring gently until no dry streaks remain. Avoid overmixing.
  7. Fold in optional mix-ins such as nuts or chocolate chips if using.
  8. Portion the batter into the mini muffin tin cups about 3/4 full, making approximately 24 mini muffins.
  9. Bake for 12-15 minutes, checking at 12 minutes with a toothpick; it should come out clean or with a few moist crumbs.
  10. Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Use very ripe bananas for natural sweetness and moisture. Avoid overmixing the batter to keep muffins tender. If batter is too thick, add a splash of milk (dairy or plant-based). Baking time may vary if using a standard muffin tin (18-20 minutes). Muffins store well at room temperature for 2 days, refrigerated for up to a week, or frozen for up to 3 months.
