  • 1/2 teaspoon (2.5 ml) vanilla extract
  • 1 to 2 tablespoons (15 to 30 ml) maple syrup, honey, or brown sugar
  • 1/8 teaspoon salt
  • Optional: whipped cream, cinnamon, caramel sauce for topping

Instructions

  1. Brew 1/2 cup (120 ml) of strong coffee or pull 2 shots of espresso. Set aside.
  2. In a small saucepan over medium heat, combine 2 tablespoons (30 ml) pumpkin puree, 1 teaspoon (2 g) pumpkin pie spice, and a pinch of salt. Whisk until warm and fragrant, about 30 seconds.
  3. Pour in 1 cup (240 ml) milk and add 1 to 2 tablespoons (15 to 30 ml) maple syrup or sweetener. Whisk continuously until smooth.
  4. Heat the mixture over medium heat, whisking occasionally, until steaming but not boiling (about 3-4 minutes). Small bubbles should form around the edges.
  5. Remove from heat and stir in 1/2 teaspoon (2.5 ml) vanilla extract. Whisk to combine.
  6. Pour the brewed coffee or espresso into a large mug. Slowly pour the hot pumpkin milk mixture over the coffee. Stir gently.
  7. Optional: Use a handheld milk frother to foam the top layer directly in the mug for 15-20 seconds, or shake the warm milk in a jar for 30 seconds before pouring.
  8. Top with whipped cream, a sprinkle of cinnamon or pumpkin pie spice, and a drizzle of caramel sauce if desired. Serve immediately.

Notes

Toast the pumpkin puree with spices first to deepen flavor. Do not boil the milk to avoid scorching. Use room temperature ingredients for smoother blending. Adjust spice level to taste. For a smoother texture, use an immersion blender if the puree clumps.
