  • 1 medium yellow onion, diced (about 1 cup)
  • 4 cloves garlic, minced
  • 1 pound ground beef (85/15)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon red pepper flakes (optional)
  • 6 cups low-sodium chicken broth
  • 1 can (15 ounces) crushed tomatoes
  • 1 can (15 ounces) tomato sauce
  • 8–10 lasagna noodles, broken into 2-inch pieces (about 8 ounces)
  • 1 cup whole milk ricotta cheese
  • 1 cup shredded mozzarella cheese (low-moisture, part-skim)
  • ½ cup grated Parmesan cheese
  • ¼ cup heavy cream or half-and-half (optional)
  • Fresh basil or parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium-high heat. Add the diced onion and cook for 4-5 minutes until soft and translucent.
  2. Add the minced garlic and stir for about 30 seconds until fragrant.
  3. Add the ground beef, breaking it up with a wooden spoon. Cook for 6-8 minutes until browned and no longer pink.
  4. Season the meat with salt, pepper, oregano, basil, and red pepper flakes (if using). Stir and cook for another minute.
  5. Pour in the chicken broth, crushed tomatoes, and tomato sauce. Stir well, scraping up any browned bits from the bottom of the pot.
  6. Bring the soup to a boil over high heat. Add the broken lasagna noodles, stirring to submerge. Reduce heat to medium-low, cover, and simmer for 15-18 minutes, stirring every 5 minutes.
  7. Check the noodles after 15 minutes; they should be tender but still hold their shape (al dente).
  8. While the soup simmers, combine the ricotta, ½ cup of the shredded mozzarella, and the grated Parmesan in a small bowl. Stir until smooth.
  9. Turn off the heat and stir the remaining ½ cup mozzarella into the soup until melted.
  10. Ladle the soup into bowls. Drop a generous dollop of the ricotta mixture into the center of each bowl. Garnish with fresh basil or parsley and serve immediately.

Notes

The soup will thicken as it sits because the noodles absorb liquid. If making ahead or planning leftovers, add an extra ½ cup of broth when reheating. For best results, save most of the mozzarella to stir in at the end and keep the ricotta as a topping to avoid clumping.
