These creepy-crawly monster eyeball deviled eggs are the perfect Halloween snack that comes together in under 30 minutes with simple ingredients. They look genuinely spooky but taste like classic deviled eggs, making them a crowd-pleaser for kids and adults alike.

  • 1/3 cup mayonnaise (preferably Duke’s or Hellmann’s)
  • 1 tablespoon yellow mustard (or Dijon for milder flavor)
  • 1 teaspoon white vinegar
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon paprika (or smoked paprika)
  • 1 jar pimento-stuffed green olives (about 24 olives, large size)
  • Optional: 1 tablespoon pickle relish

Instructions

  1. Boil the eggs: Place eggs in a single layer in a medium saucepan. Cover with cold water by about an inch. Bring to a rolling boil over high heat, then immediately cover and remove from heat. Let sit for exactly 12 minutes.
  2. Ice bath shock: While eggs cook, fill a large bowl with ice and cold water. Transfer eggs to ice bath using a slotted spoon. Let sit for at least 10 minutes to stop cooking and make peeling easier.
  3. Peel carefully: Gently tap each egg on the counter to crack the shell all over, then roll between palms. Start peeling from the wider end. Run under cold water while peeling to remove stubborn bits.
  4. Halve the eggs: Using a sharp knife, slice each peeled egg lengthwise. Wipe knife clean between cuts. Gently pop out yolks into a small mixing bowl. Arrange white halves on serving platter, cut side up.
  5. Make the filling: Add mayonnaise, yellow mustard, white vinegar, salt, and pepper to the bowl with yolks. Mash together with a fork until smooth and creamy. If using pickle relish, stir it in now. Taste and adjust seasoning.
  6. Pipe the filling: Spoon yolk mixture into a piping bag or sturdy zip-top bag. Snip off about 1/2 inch from one corner. Pipe a generous swirl into each egg white half, mounding slightly above the edge.
  7. Create the eyeballs: Drain olives and slice each crosswise into rounds about 1/4 inch thick. Place one olive slice on top of each filled egg, pimento side up. Press down gently to stick.
  8. Finish with paprika: Lightly sprinkle paprika over the entire platter for a blood-splatter effect.
  9. Chill before serving: Refrigerate finished deviled eggs for at least 30 minutes before serving. Can be made up to 24 hours in advance—add olive slices just before serving.

Notes

For easy peeling, use eggs that are at least a week old. Steaming eggs instead of boiling can make peeling even easier. If filling becomes too thin, add instant mashed potato flakes to thicken. For transport, use a deviled egg carrier or baking dish with paper towels underneath to prevent sliding. Leftovers keep in the refrigerator for up to 2 days in an airtight container.
