Light & Cozy Chai-Spiced Pumpkin Scones

These tender, lightly sweet scones are infused with warm chai spices and pumpkin, made lighter with Greek yogurt. Ready in about 30 minutes, they’re the perfect fall treat for a cozy breakfast or gathering.

  • 1/3 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon

  • 1/4 teaspoon ground nutmeg
  • 1/4 cup cold unsalted butter, cut into small cubes
  • 1/2 cup canned pumpkin puree
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 2 tablespoons milk (for glaze)
  • 1/4 teaspoon vanilla extract (for glaze)
  • Pinch of cinnamon (for glaze, optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, salt, cinnamon, ginger, cardamom, cloves, and nutmeg.
  3. Cut cold butter into the flour mixture using a pastry cutter or two forks until it resembles coarse crumbs with some pea-sized butter pieces.
  4. In a separate small bowl, whisk together pumpkin puree, Greek yogurt, milk, and vanilla extract until smooth.
  5. Pour wet mixture into dry mixture and stir with a spatula until just combined. Dough will be shaggy and slightly dry.
  6. Turn dough onto a lightly floured surface. Gently bring together with hands and pat into a 3/4-inch thick circle (about 8 inches across).
  7. Cut circle into 8 equal wedges. Transfer wedges to prepared baking sheet, spacing 2 inches apart.
  8. Bake for 14-16 minutes, until bottoms are lightly golden and edges are set. Tops will remain pale.
  9. Cool on baking sheet for 5 minutes, then transfer to a cooling rack.
  10. For the glaze: whisk together powdered sugar, 2 tablespoons milk, 1/4 teaspoon vanilla, and a pinch of cinnamon until smooth and drizzle-able.
  11. Drizzle glaze over warm scones. Let set for 5 minutes before serving.

Notes

Keep butter and ingredients cold for flaky scones. Do not overmix dough. For best texture, let scones cool before glazing. Scones can be frozen unglazed for up to 3 months.
