  • 68 fresh Mission figs, sliced
  • 1/3 cup (40g) walnuts, roughly chopped or crushed, toasted
  • 2 tablespoons hot honey
  • One sheet puff pastry, thawed (optional)
  • A few sprigs fresh thyme for garnish
  • Freshly cracked black pepper, to taste
  • Flour for dusting if using puff pastry

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Toast the walnuts in a small skillet over medium heat for 3-4 minutes until fragrant and slightly golden. Stir frequently to avoid burning. Remove from heat and let cool.
  3. If desired, score the top rind of the brie lightly with a sharp knife to help the cheese ooze out when baked. If using puff pastry, dust a clean surface with flour, roll out the pastry sheet, and place the brie wheel in the center.
  4. Slice the fresh Mission figs into quarters and set aside.
  5. Sprinkle toasted walnuts evenly over the brie, then layer the sliced figs on top.
  6. Drizzle 2 tablespoons of hot honey generously over the figs and walnuts, letting it soak in a bit.
  7. If using puff pastry, fold the pastry edges up and over the brie, pinching the seams to seal. Brush with egg wash if available for a golden finish.
  8. Place the prepared brie on the lined baking sheet. Bake for 15-20 minutes if uncovered, or 25-30 minutes if wrapped in puff pastry, until the pastry is golden or the brie is melty and bubbly.
  9. Remove from oven, sprinkle fresh thyme leaves and a few cracks of black pepper on top. Let it rest for 5 minutes to thicken slightly.
  10. Serve immediately with crusty bread, crackers, or fresh fruit slices.

Do not overbake the brie to avoid a melted puddle; watch closely after 15 minutes. Toast walnuts separately for best flavor and crunch. Let the baked brie rest for 5 minutes before serving to avoid a gooey mess. Fresh figs are preferred; if using dried, soak briefly in warm water. Puff pastry is optional and adds a golden crust. Egg wash helps achieve a shiny crust if using puff pastry.
