Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
  2. In a medium bowl, whisk together the dry ingredients: 1 ½ cups all-purpose flour, 1 teaspoon baking powder, ½ teaspoon baking soda, ½ teaspoon salt, 2 teaspoons pumpkin pie spice, 1 teaspoon cinnamon, and 1 tablespoon instant espresso powder.
  3. In a large bowl, whisk together the wet ingredients: 1 cup granulated sugar, ½ cup packed light brown sugar, ½ cup vegetable oil, 2 large eggs (room temperature), 1 cup pumpkin puree, 1 teaspoon vanilla extract, and ¼ cup milk.
