A quick and easy fall cocktail made with apple cider, sparkling wine, and cinnamon. Perfect for Thanksgiving, Friendsgiving, or any fall gathering, this mimosa comes together in under five minutes and tastes like autumn in a glass.

  • 1 bottle (750 ml) chilled sparkling wine (prosecco or brut champagne)
  • 1 cup chilled apple cider (unfiltered preferred)
  • 4–6 cinnamon sticks
  • 4–6 orange slices
  • 1–2 tablespoons maple syrup or honey (optional)
  • 2 tablespoons granulated sugar (for rim)
  • 1 teaspoon ground cinnamon (for rim)
  • 1 orange wedge (for rimming glass)

Instructions

  1. Prepare the cinnamon-sugar rim (optional): Mix granulated sugar and ground cinnamon in a small shallow dish. Run an orange wedge around the rim of each glass, then dip into the cinnamon-sugar mixture to coat evenly. Tap off excess.
  2. Add one cinnamon stick to each glass.
  3. Fill each glass about one-third full with chilled apple cider (about 1/4 cup per glass).
  4. Slowly pour chilled sparkling wine into each glass, filling almost to the top. Pour gently to avoid excessive foam.
  5. Garnish each glass with a thin orange slice, either floating on top or perched on the rim. Serve immediately.

Notes

Chill all ingredients beforehand for best results. The order matters: pour cider first, then champagne. For a non-alcoholic version, swap sparkling wine for sparkling apple cider or ginger ale. For a stronger drink, add a shot of bourbon. The cinnamon stick infuses flavor as you sip; if using ground cinnamon, sprinkle a tiny pinch on top. Do not make ahead—bubbles will go flat. Serve immediately.
