Perfect Virgo Season Chocolate Cake Recipe with Gold Leaf

This isn’t just another chocolate cake recipe. After testing this version about seven times, I can confidently say this is the one that nails the balance between rich, decadent flavor and a perfectly refined crumb. It’s the cake you make when you want to impress without the stress.

  • 2 ½ cups (315g) all-purpose flour
  • 1 cup (85g) unsweetened cocoa powder (Dutch-processed preferred)
  • 2 cups (400g) granulated sugar
  • ½ cup (100g) light brown sugar, packed
  • 1 ½ tsp baking powder
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 1 tsp espresso powder (optional)
  • 1 ½ cups (360ml) buttermilk, room temperature
  • ½ cup (120ml) vegetable oil
  • 3 large eggs, room temperature
  • 2 tsp vanilla extract
  • 1 cup (240ml) hot water or hot coffee
  • 12 oz (340g) semi-sweet or bittersweet chocolate, finely chopped
  • 1 ½ cups (360ml) heavy cream
  • 2 tbsp (28g) unsalted butter, softened
  • Pinch of salt
  • 12 sheets edible gold leaf

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 9-inch cake pans, line bottoms with parchment paper, and dust with cocoa powder.
  2. In a large bowl, whisk together flour, cocoa powder, granulated sugar, brown sugar, baking powder, baking soda, salt, and espresso powder.
  3. Add vegetable oil to dry ingredients. Using a stand mixer with paddle attachment on low, mix until mixture resembles damp sand (about 2 minutes).
  4. In a separate bowl, whisk together buttermilk, eggs, and vanilla extract. With mixer on low, slowly pour half of this mixture into dry ingredients. Mix until just combined, scraping bowl.
  5. With mixer on low, slowly pour in hot water (or coffee). Mix for about 30 seconds until smooth and glossy. Scrape bowl.
  6. Divide batter evenly between prepared pans (about 650g each). Bake for 30-35 minutes, until a toothpick inserted in center comes out with a few moist crumbs.
  7. Cool cakes in pans on a wire rack for 15 minutes. Run a knife around edges, invert onto rack, peel off parchment, and cool completely.
  8. For ganache: Place chopped chocolate in a heat-safe bowl. Heat heavy cream in a small saucepan until just simmering. Pour over chocolate, let sit 5 minutes, then whisk until smooth. Add butter and salt, whisk until incorporated. Cool at room temperature for 30 minutes until spreadable.
  9. Place one cake layer on serving plate. Spread about 1 cup ganache evenly on top. Place second layer on top. Apply thin crumb coat of ganache to entire cake. Refrigerate 20 minutes.
  10. Apply remaining ganache to top and sides of cake. Using tweezers or a dry brush, apply gold leaf pieces to top of cake.

Notes

Room temperature ingredients matter for best texture. Don’t overmix batter. The hot water trick helps bloom cocoa powder. Level cakes before assembling. Ganache temperature is crucial for spreading. Cake tastes even better on day two.
