This quick and easy breakfast casserole combines savory sausage, gooey cheddar cheese, and custard-soaked bread in one pan for a hearty, crowd-pleasing meal that comes together in under 40 minutes.

  • 1 lb (450g) breakfast sausage (bulk or links, casings removed)
  • 8 large eggs
  • 1 cup (240 ml) whole milk
  • 2 cups (200g) shredded cheddar cheese
  • 4 cups (about 200g) day-old bread, cubed (sourdough or French bread recommended)
  • 1 tablespoon Dijon mustard
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup sliced green onions (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish with non-stick spray or butter.
  2. Brown the sausage in a large skillet over medium-high heat, breaking it up with a wooden spoon, until cooked through and browned (6-8 minutes). Transfer to a paper towel-lined plate to drain.
  3. Cube the bread into 1-inch pieces. If using fresh bread, toast cubes on a baking sheet for 5 minutes in the oven while sausage cooks.
  4. Layer the bread cubes evenly in the prepared dish. Sprinkle cooked sausage over the bread, then scatter half of the shredded cheese (about 1 cup) and half of the green onions (if using) over the top.
  5. In a medium bowl, whisk together eggs, milk, Dijon mustard, salt, and pepper until smooth and pale yellow (about 30 seconds).
  6. Pour the egg mixture evenly over the bread and sausage. Gently press down with a spatula to help bread absorb the liquid. Let sit for 5 minutes.
  7. Sprinkle the remaining cheese (about 1 cup) and any reserved green onions over the top.
  8. Bake for 25-30 minutes, until edges are golden brown and center is just set (slightly jiggly but not liquid). A knife inserted into the center should come out clean. If top browns too quickly, tent with foil for the last 10 minutes.
  9. Let the casserole rest for 5 minutes before cutting into squares. Serve hot.

For best texture, use day-old bread. If using fresh bread, toast cubes first. Let the casserole rest 5 minutes after baking to set. To make ahead, assemble through step 6, cover, and refrigerate overnight; add cheese and bake in the morning, adding 5-10 minutes to baking time. Leftovers keep in the refrigerator for up to 4 days or freeze for up to 3 months.
