A quick and easy funfetti birthday cake that comes together in under 30 minutes using simple pantry ingredients. Perfect for last-minute celebrations, this one-bowl cake delivers a tender crumb and bursts of color from rainbow sprinkles.

  • 1 cup granulated sugar
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • ¾ cup whole milk (2% or oat milk works)
  • 2 teaspoons vanilla extract
  • ½ cup rainbow sprinkles (jimmies, not nonpareils)
  • ½ cup unsalted butter, softened (for frosting)
  • 2 cups powdered sugar (for frosting)
  • 2 tablespoons heavy cream (for frosting; milk works too)
  • 1 teaspoon vanilla extract (for frosting)
  • Pinch of salt (for frosting)
  • Extra sprinkles for decorating

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your cake pan: cut a circle of parchment paper to fit the bottom of a 9-inch round cake pan. Grease the pan with butter or non-stick spray, place the parchment in, and grease the parchment too. Dust with a little flour.
  3. In a large bowl, whisk together the flour, sugar, baking powder, and salt until evenly combined.
  4. Make a well in the center of the dry ingredients. Pour in the melted butter, eggs, milk, and vanilla extract. Whisk until just combined—do not overmix. A few small lumps are fine.
  5. Gently fold in the rainbow sprinkles with a rubber spatula, folding only 5-6 times to distribute them without bleeding color.
  6. Pour the batter into the prepared pan and spread evenly. Tap the pan gently on the counter to release air bubbles.
  7. Bake for 22-26 minutes, starting to check at 22 minutes. Insert a toothpick into the center—if it comes out clean or with a few moist crumbs, it’s done.
  8. Let the cake cool in the pan for 10 minutes. Then run a knife around the edge, invert onto a cooling rack, and peel off the parchment. Cool completely before frosting (about 30 minutes).
  9. While the cake cools, make the frosting: beat the softened butter in a medium bowl until smooth. Add powdered sugar one cup at a time, beating on low speed. Add heavy cream, vanilla, and salt. Beat on medium-high for 2 minutes until light and fluffy. Adjust consistency with more cream or powdered sugar as needed.
  10. Once the cake is completely cool, spread the frosting evenly over the top and sides. Sprinkle extra sprinkles on top while the frosting is still soft.

Notes

Use jimmies (long rod-shaped sprinkles) to prevent color bleeding. Room temperature ingredients help but cold ones work too. Do not overmix the batter. Cool cake completely before frosting to avoid melting. Cake tastes even better the next day.
