These quick garlic butter pork chops are a weeknight hero—ready in under 30 minutes with simple ingredients. A hot pan, quick sear, and butter basting method lock in moisture while building a gorgeous golden crust.

  • 4 bone-in pork chops, about 1-inch thick
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 6 cloves garlic, minced
  • 2 sprigs fresh thyme
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon lemon juice

Instructions

  1. Take the chill off your pork chops. About 15 minutes before cooking, remove pork chops from refrigerator and let sit on counter. Pat dry with paper towels.
  2. Make the dry rub. In a small bowl, combine salt, black pepper, garlic powder, and paprika. Sprinkle evenly over both sides of each pork chop, pressing gently.
  3. Heat your pan. Place a large cast-iron skillet over medium-high heat and add olive oil. Heat until oil shimmers, about 2-3 minutes.
  4. Sear the pork chops. Carefully place pork chops in hot pan. Cook undisturbed for 4-5 minutes until deeply browned. Flip with tongs.
  5. Cook the second side for 3-4 minutes. Check internal temperature with a meat thermometer—aim for 135°F for medium.
  6. Add the garlic butter. Reduce heat to medium-low. Add butter to pan. As it melts, add minced garlic and fresh thyme. Tilt pan and baste butter over pork chops for 1-2 minutes until garlic is fragrant.
  7. Rest the meat. Transfer pork chops to a cutting board. Pour garlic butter sauce over top. Let rest for 5 minutes.
  8. Finish and serve. Sprinkle fresh parsley over pork chops and add a squeeze of lemon juice. Serve immediately with remaining garlic butter sauce spooned over top.

Notes

For best results, use bone-in pork chops about 1-inch thick. Pat meat dry before seasoning for a good sear. Don’t overcrowd the pan—cook in batches if needed. Let pork chops rest for 5 minutes after cooking to retain juices. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
