These soft-baked apple cider cookies are the essence of fall—concentrated, warm, and perfectly spiced. The secret is reducing the cider on the stove until it’s a syrupy, almost caramel-like concentrate, giving you deep apple flavor without making the cookies soggy or overly sweet.

  • 1/2 cup (100 g) granulated sugar
  • 1/4 cup (50 g) light brown sugar, packed

  • 1 1/2 cups (180 g) all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • For the Cinnamon-Sugar Coating:
  • 1/4 cup (50 g) granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Reduce the Apple Cider (8-10 minutes): Pour 1 cup of apple cider into a small saucepan. Bring to a boil over medium-high heat, then reduce heat to medium-low and simmer until reduced to about 1/4 cup, stirring occasionally. The cider should be dark and syrupy. Pour into a small bowl and let cool for a few minutes.
  2. Preheat and Prep: Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper. In a small bowl, whisk together 1/4 cup granulated sugar and 1 teaspoon cinnamon for the coating. Set aside.
  3. Mix the Dry Ingredients: In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves. Set aside.
  4. Cream the Butter and Sugars: In a large mixing bowl, beat the softened butter with granulated sugar and brown sugar on medium speed until light, fluffy, and pale (about 2-3 minutes). Scrape down the sides as needed.
  5. Add the Wet Ingredients: Beat in the egg and vanilla extract until well combined. The mixture may look slightly curdled. Pour in the cooled reduced cider and beat until incorporated.
  6. Combine Wet and Dry: Gradually add the dry ingredients to the wet mixture, mixing on low speed just until the flour disappears and a soft dough forms. Do not overmix.
  7. Scoop and Coat: Using a cookie scoop (about 1.5 tablespoons), scoop rounded balls of dough. Roll each ball in the cinnamon-sugar mixture to coat completely. Place on the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake: Bake for 9-11 minutes, until the edges are set and just barely starting to turn golden brown. The centers will still look soft and slightly puffy. Do not overbake.
  9. Cool: Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire cooling rack to cool completely.
