  • 2 cups sharp cheddar cheese, shredded
  • 1/4 cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt (optional)
  • 1/2 cup black sesame seeds
  • 1/4 cup white sesame seeds
  • 1 tablespoon poppy seeds (optional)
  • 8–10 black olives, pitted
  • 1/4 cup cream cheese (for spider decoration)
  • Pretzel sticks (for spider legs)

Instructions

  1. Soften the cream cheese: Take cream cheese out of fridge at least 30 minutes before starting. If in a rush, cut into cubes and microwave on low for 10-15 seconds.
  2. Mix the base: In a large mixing bowl, combine softened cream cheese, shredded cheddar, sour cream, garlic powder, onion powder, smoked paprika, black pepper, and salt. Beat with a hand mixer on medium speed until smooth and uniform, about 2-3 minutes. Scrape down sides halfway through.
  3. Chill the mixture: Cover bowl with plastic wrap and refrigerate for at least 1 hour until firm.
  4. Toast the sesame seeds: Heat a small skillet over medium heat. Toast black sesame seeds, stirring constantly, for 2-3 minutes until fragrant. Immediately transfer to a plate to cool. Repeat with white sesame seeds in a separate batch.
  5. Shape the cheese ball: Scoop chilled mixture onto a large piece of plastic wrap. Use hands to shape into a smooth, round ball about 5-6 inches in diameter. Use plastic wrap to help mold.
  6. Apply the black sesame coating: Spread cooled black sesame seeds on a plate. Unwrap cheese ball and roll gently in seeds, pressing lightly for full coverage. Use hands to pat on any stubborn spots.
  7. Create the spiderweb pattern: Using a toothpick, gently press lines into the cheese ball starting from the top and radiating outward like a spiderweb. Start with 4-5 main lines, then add curved connecting lines between them. Go slowly and don’t press too deep.
  8. Add the white sesame accents: Sprinkle a few white sesame seeds along the web lines for contrast. Gently press them into the grooves with your fingertip.
  9. Make the spider: Roll a small amount of cream cheese into a tiny ball for the body. Cut an olive in half lengthwise; one half becomes the body, the other half slice into smaller pieces for the head. Use cream cheese to attach olive pieces together. Break pretzel sticks into small pieces and insert into the cream cheese ball on either side of the olive body for legs (4 legs per side). Place spider on top of cheese ball.
  10. Final chill: Return cheese ball to refrigerator for at least 30 minutes to set.

Notes

For best results, chill the mixture at least 1 hour before shaping. Don’t over-toast sesame seeds—they burn quickly. Bring cheese ball to room temperature 15-20 minutes before serving for best flavor. Can be made up to 2 days ahead; add spiderweb pattern and spider decoration just before serving.
