Sweet & Smoky Bourbon Peach Chicken Skewers: Easy Grilled Recipe

Juicy chicken thighs and ripe peaches marinated in a sweet and smoky bourbon glaze, grilled to perfection. This easy recipe is perfect for late summer cookouts and delivers a crowd-pleasing balance of flavors.

  • 1/4 cup bourbon (e.g., Bulleit or Maker’s Mark)
  • 1/3 cup packed brown sugar (light or dark)
  • 1/4 cup low-sodium soy sauce (or tamari/coconut aminos for gluten-free)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground ginger (or 1 teaspoon fresh grated ginger)
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper, freshly ground
  • 1.5 pounds boneless, skinless chicken thighs, cut into 1.5-inch chunks
  • 3 medium ripe but firm peaches, cut into 1-inch chunks
  • 1 medium red onion, cut into 1-inch chunks
  • 12 wooden skewers (soaked in water for 30 minutes) or metal skewers
  • 2 tablespoons fresh cilantro, chopped (optional)
  • Lime wedges, for serving
  • Flaky sea salt, for finishing

Instructions

  1. Soak wooden skewers in water for at least 30 minutes. If using metal skewers, skip this step.
  2. In a large mixing bowl, combine bourbon, brown sugar, soy sauce, olive oil, minced garlic, smoked paprika, ground ginger, salt, and black pepper. Whisk until sugar dissolves.
  3. Cut chicken thighs into 1.5-inch chunks and add to the marinade. Toss to coat.
  4. Cut peaches into 1-inch chunks (do not peel) and red onion into 1-inch chunks. Add to the bowl with the chicken and gently toss to coat. Marinate at room temperature for 15-20 minutes (do not exceed 30 minutes).
  5. Preheat grill to medium-high heat (400-450°F). If using charcoal, wait until coals are covered with white ash. For gas grills, preheat with lid closed for 10-15 minutes.
  6. Thread chicken, peaches, and onion onto skewers, alternating between them. Leave a small gap between each piece.
  7. Grill skewers for 4-5 minutes per side, turning once, until chicken reaches an internal temperature of 165°F and peaches have nice grill marks. During the last 2 minutes, brush with any remaining marinade.
  8. Remove skewers from grill and let rest for 5 minutes. Sprinkle with flaky sea salt and chopped cilantro. Serve with lime wedges.

Notes

Soak wooden skewers for at least 30 minutes to prevent burning. Oil grill grates well to prevent sticking. For extra smoky flavor, add a foil packet of soaked wood chips to the grill. Do not marinate longer than 30 minutes to avoid mushy chicken. Use two parallel skewers per kebab to make flipping easier.
