A tender and juicy slow cooker chicken breast recipe infused with garlic butter, perfect for an effortless weeknight dinner or special occasion.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 6 oz / 170g each)
  • 4 tablespoons unsalted butter (about 57g), softened
  • 6 large garlic cloves, minced finely
  • 1/2 cup chicken broth (120ml), low sodium preferred
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped (optional garnish)

Instructions

  1. In a small bowl, blend 4 tablespoons softened unsalted butter with the minced garlic cloves until well combined.
  2. Lightly pat the chicken breasts dry with paper towels, then season both sides with salt, black pepper, paprika, and dried thyme.
  3. Spread the garlic butter mixture evenly over each chicken breast.
  4. Arrange the coated chicken breasts in a single layer at the bottom of the slow cooker.
  5. Pour the 1/2 cup chicken broth and 2 tablespoons fresh lemon juice evenly over the chicken.
  6. Cover and cook on low for 3 to 4 hours, checking at 3 hours for doneness (internal temperature should reach 165°F / 74°C). Alternatively, cook on high for 2 hours if in a rush.
  7. Carefully remove chicken breasts with tongs and place on a serving dish. Spoon some of the buttery garlic broth over the top and sprinkle with chopped fresh parsley.

Notes

Use a meat thermometer to ensure chicken reaches 165°F (74°C) for safe consumption. Cooking on low heat keeps chicken tender and juicy. Butter is essential for flavor and moisture; for dairy-free, substitute with coconut oil and vegetable broth. If slow cooker runs hot, check chicken early to avoid dryness. Leftovers reheat best gently with added moisture.
