  • 2 cans (15 oz each) great northern beans, drained and rinsed

  • 4 cups low-sodium chicken broth
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 8 oz block cream cheese, softened and cut into cubes (full-fat)
  • 1/2 cup heavy cream or half-and-half
  • 1 tbsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1/2 tsp chili powder
  • 1/2 tsp salt, plus more to taste
  • 1/4 tsp black pepper
  • Pinch of cayenne pepper (optional)
  • Fresh cilantro, chopped (for garnish)
  • Shredded Monterey Jack cheese (for garnish)
  • Sliced avocado (for garnish)
  • Tortilla chips or strips (for garnish)
  • Fresh lime juice (for garnish)

Instructions

  1. Prep the aromatics: Dice the onion and mince the garlic.
  2. Combine the spices: In a small bowl, mix together cumin, smoked paprika, oregano, chili powder, salt, pepper, and cayenne if using.
  3. Layer in the crockpot: Place chicken breasts in the bottom. Add diced onion, minced garlic, drained beans, corn, and diced green chiles on top.
  4. Add the liquid and spices: Pour chicken broth over everything. Sprinkle spice mixture over the top. Stir gently to combine.
  5. Cook low and slow: Cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
  6. Shred the chicken: About 30 minutes before serving, remove chicken, shred with two forks, and return to crockpot.

Notes

Use full-fat cream cheese to prevent curdling. For a thicker chili, mash half a cup of beans against the side of the crockpot before adding cream cheese. Leftovers keep for up to 5 days in the fridge or 3 months in the freezer.
