Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it well.
  2. Make the streusel first: In a small bowl, combine the flour, rolled oats, brown sugar, and cinnamon. Add the cold cubed butter. Use a pastry cutter, fork, or your fingers to work the butter into the dry ingredients until the mixture looks like coarse crumbs with some pea-sized pieces. Pop this in the fridge while you make the batter.
  3. Whisk the dry ingredients: In a medium bowl, whisk together the whole wheat flour, baking soda, baking powder, pumpkin pie spice, and salt. Set aside.
  4. Mix the wet ingredients: In a separate large bowl, whisk together the maple syrup, melted coconut oil, eggs, pumpkin puree, milk, and vanilla extract for a full minute until smooth and slightly emulsified.
  5. Combine wet and dry: Pour the dry ingredients into the wet. Use a rubber spatula to fold everything together gently until just combined. A few lumps are fine.
  6. Fill the muffin cups: Divide the batter evenly among the 12 cups, filling them about three-quarters full.
