Wholesome Slow Cooker Venison Chili with Smoked Paprika

This hearty venison chili is incredibly easy to make—just toss everything in the slow cooker and walk away. The smoked paprika adds a deep, smoky flavor that makes this lean, protein-packed chili a weeknight hero.

  • 2 pounds ground venison (or venison stew meat, chopped small)
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 2 tablespoons smoked paprika (preferably Spanish smoked paprika)
  • 1 tablespoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 can (15 ounces) fire-roasted diced tomatoes
  • 1 can (15 ounces) tomato sauce
  • 2 cans (15 ounces each) kidney beans, drained and rinsed
  • 1 cup beef broth (or venison broth, low-sodium)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt (plus more to taste)
  • 1/2 teaspoon black pepper
  • 2 bay leaves
  • Optional toppings: shredded cheddar cheese, sour cream or Greek yogurt, sliced green onions, fresh cilantro, diced avocado, pickled jalapeños

Instructions

  1. Brown the venison (optional but recommended): Heat a large skillet over medium-high heat. Add the ground venison and cook until browned, breaking it up with a wooden spoon, about 5-7 minutes. Drain any excess fat. If short on time, you can skip this step and add raw venison directly to the slow cooker.
  2. Sauté the aromatics: In the same skillet (or a clean one), add a splash of olive oil over medium heat. Add the diced onion and cook until softened and translucent, about 4-5 minutes. Add the minced garlic and cook for another 30 seconds until fragrant.
  3. Layer the spices: Add the smoked paprika, cumin, chili powder, oregano, and cayenne (if using) to the onions and garlic. Stir constantly for about 30 seconds until the spices become fragrant.
  4. Combine everything in the slow cooker: Transfer the browned venison (or raw venison) and the onion-spice mixture to the slow cooker. Add the fire-roasted diced tomatoes (with their juices), tomato sauce, drained kidney beans, beef broth, Worcestershire sauce, salt, pepper, and bay leaves. Stir everything together until well combined.
  5. Cook low and slow: Cover the slow cooker and cook on LOW for 6-8 hours or on HIGH for 3-4 hours. The longer it cooks, the more the flavors meld together.
  6. Check and adjust: About 30 minutes before serving, remove the bay leaves and taste the chili. Adjust seasoning as needed (more salt, a pinch of sugar, or another dash of smoked paprika).
  7. Thicken if desired: If the chili is thinner than you’d like, mash some of the beans against the side of the slow cooker with a fork, or stir in a tablespoon of tomato paste. Let it cook uncovered for the last 15-20 minutes to thicken.
  8. Serve with your favorite toppings: Ladle the chili into bowls and let everyone customize their own with cheese, sour cream, green onions, cilantro, avocado, or pickled jalapeños.

Notes

For best flavor, toast the spices with the onions. Venison is lean, so watch liquid levels—add more broth if needed. Chili tastes even better the next day. Freezes well for up to 3 months. For a thicker chili, mash some beans or add tomato paste. If using frozen venison, thaw completely first.
