  • 2 tablespoons olive oil
  • 1 large yellow onion, diced (about 1 ½ cups)
  • 4 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 ½ pounds lean ground turkey (93/7)
  • 2 medium sweet potatoes, peeled and cut into ½-inch cubes (about 3 cups)
  • 1 can (14.5 ounces) diced tomatoes, with juices
  • 1 can (8 ounces) tomato sauce
  • 2 cups low-sodium chicken broth
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 2 tablespoons smoked paprika
  • 1 teaspoon chipotle powder
  • 1 ½ teaspoons ground cumin
  • 1 teaspoon dried oregano (preferably Mexican)
  • 1 ½ teaspoons salt
  • ½ teaspoon freshly ground black pepper
  • 1 bay leaf
  • 1 tablespoon apple cider vinegar
  • Fresh cilantro, chopped, for garnish
  • Lime wedges, for serving
  • Sour cream or Greek yogurt, optional
  • Shredded cheddar cheese, optional

Instructions

  1. Prep all ingredients: dice onion, mince garlic, chop bell pepper, peel and cube sweet potatoes, drain and rinse beans, and measure spices into a small bowl.
  2. Heat olive oil in a large Dutch oven over medium-high heat until shimmering. Add diced onion and cook 4-5 minutes until translucent and lightly browned.
  3. Add minced garlic and diced bell pepper; cook 2 minutes, stirring constantly, until fragrant.
  4. Add ground turkey. Let cook undisturbed for 3 minutes to sear, then break into smaller pieces and cook until no pink remains, about 5-6 minutes total.
  5. Stir in smoked paprika, chipotle powder, cumin, oregano, salt, and black pepper. Cook 1 minute to toast spices.
  6. Add cubed sweet potatoes, diced tomatoes with juices, tomato sauce, and chicken broth. Stir well, scraping up any browned bits from the bottom.
  7. Add bay leaf and bring to a boil. Reduce heat to low, cover, and simmer 20 minutes, stirring occasionally.
  8. Stir in drained black beans and kidney beans. Simmer uncovered 10-15 minutes until sweet potatoes are tender and chili has thickened.
  9. Remove bay leaf and stir in apple cider vinegar. Taste and adjust salt if needed.
  10. Let chili rest 5 minutes off heat before serving. Ladle into bowls and garnish with cilantro, lime wedges, and desired toppings.

Notes

For extra smoky flavor, use fire-roasted diced tomatoes. If chili is too thick, add a splash of broth or water; if too thin, simmer uncovered a few extra minutes. Chili thickens as it sits and tastes even better the next day. For a vegetarian version, swap turkey for extra beans or plant-based meat and use vegetable broth.
