A happy accident turned into a family favorite! These air fryer maple cinnamon pumpkin seeds are sweet, crunchy, and incredibly addictive. Made with simple pantry ingredients, they come together in under 20 minutes for the perfect fall snack.

  • 1 cup (120g) raw pumpkin seeds (pepitas)
  • 2 tablespoons (30ml) pure maple syrup
  • 1 teaspoon cinnamon
  • 1 tablespoon (15ml) coconut oil or melted butter
  • ½ teaspoon fine sea salt
  • ½ teaspoon vanilla extract (optional but recommended)
  • 1 tablespoon brown sugar (optional for extra crunch)

Instructions

  1. Prep the seeds: If using fresh pumpkin seeds, rinse thoroughly and boil in salted water for 10 minutes. Drain and pat completely dry. If using store-bought raw pepitas, rinse and dry.
  2. Mix the coating: In a medium bowl, combine maple syrup, melted coconut oil (or butter), cinnamon, salt, vanilla extract, and brown sugar (if using). Whisk until smooth.
  3. Coat the seeds: Add dried pumpkin seeds to the bowl and stir until every seed is evenly coated.
  4. Preheat the air fryer to 300°F (150°C) for 3 minutes.
  5. Arrange the seeds in a single layer in the air fryer basket. Do not overcrowd; work in batches if needed.
  6. Air fry at 300°F (150°C) for 10 minutes. Shake the basket gently, then cook for another 3-5 minutes until golden brown and fragrant.
  7. Cool completely on a plate or baking sheet for at least 15 minutes. The seeds will crisp up as they cool.
  8. Break apart any clumps with your fingers once cooled.

Notes

Do not skip drying the seeds thoroughly—wet seeds lead to chewy results. Watch the temperature closely; maple syrup burns easily. Let seeds cool completely for maximum crunch. Seeds taste even better the next day as flavors meld.
