  • 1 large egg yolk

  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ⅓ cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Melt the butter in a microwave-safe bowl in 20-second bursts until just melted. Set aside to cool slightly.
  3. In a medium bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth and slightly thickened, about 30 seconds.
  4. Add the egg yolk and vanilla extract, whisk until well combined and glossy.
  5. In a small bowl, whisk together the flour, baking soda, and salt.
  6. Pour the dry ingredients into the wet ingredients. Fold with a rubber spatula until just combined—do not overmix.
  7. Fold in the chocolate chips. Reserve a few chips to press onto the tops of the dough balls.
  8. Scoop the dough into 6 equal portions (about 1.5 tablespoons each). Roll into balls and place on the prepared baking sheet, spacing 2 inches apart. Press reserved chocolate chips onto the tops.
  9. Bake for 10-12 minutes, until edges are golden brown and centers are still slightly puffy and soft.
  10. Let cookies cool on the baking sheet for 5 minutes, then transfer to a cooling rack. Serve warm or at room temperature.

Notes

For best results, use a kitchen scale to measure flour (50 grams). Let melted butter cool for 2-3 minutes before adding egg yolk to avoid scrambling. If cookies spread too much, butter was too warm; if they don’t spread enough, flour was over-measured. Store in an airtight container at room temperature for up to 3 days. Freeze baked cookies for up to 3 months or unbaked dough balls for up to 3 months.
