  • 1 tablespoon vegetable oil
  • 1 tablespoon sesame oil
  • 3 tablespoons soy sauce (low-sodium if desired)
  • 2 tablespoons gochujang (Korean chili paste)
  • 1 tablespoon brown sugar (packed)
  • 1 tablespoon rice vinegar
  • 2 cloves garlic (minced)
  • 1 teaspoon grated ginger (fresh or powdered)
  • 1 cup frozen mixed vegetables (peas, carrots, corn blend)
  • 2 green onions (sliced)
  • 1 teaspoon sesame seeds (optional)
  • 1 soft-boiled egg (optional)

Instructions

  1. Bring a large pot of water to a boil. In a small bowl, combine soy sauce, gochujang, brown sugar, rice vinegar, minced garlic, and grated ginger. Whisk until smooth. Set aside.
  2. Cook ramen noodles in boiling water for exactly 2 minutes. Drain and rinse with cold water to stop cooking. Shake off excess water.
  3. Heat a large skillet or wok over medium-high heat. Add vegetable oil and sesame oil. Swirl to coat. Add frozen vegetables and stir-fry for 2-3 minutes until heated through and starting to brown.
  4. Add noodles to the pan, spread in an even layer, and let sit undisturbed for 30 seconds to create crispy bits. Toss and repeat once or twice (about 2 minutes total).
  5. Pour sauce over noodles and toss quickly to coat. Stir constantly over medium-high heat for 1-2 minutes until sauce reduces and noodles are glossy.
  6. Remove from heat. Transfer to serving bowls. Top with sliced green onions, sesame seeds, and a soft-boiled egg if desired.

Notes

Don’t overcook the noodles in the pot; they should still have a bite. Prep all ingredients before cooking. For best texture, let drained noodles rest 2-3 minutes to remove excess water. If doubling, use a large pan or cook in batches.
